Crunchy Ranch Baked Chicken

Who doesn’t need another option for baking?chicken breasts??? Here’s one that’s super easy and super yummy. Serve with Baked Gouda Mac and Cheese, Roasted Garlic Lemon Broccoli, or Baked Risotto with Asparagus and Spinach.

4 chicken breasts, boneless, skinless
1 cup cornflakes cereal, crushed
1 packet Ranch dressing mix, dry
1 egg
Kosher salt and freshly ground black pepper, to taste
Extra virgin olive oil, for drizzling


  • Pre heat oven to 400 degrees F.
  • In a large zip lock bag, shake together cornflakes and ranch dressing mix. Set aside.
  • In a small bowl, whisk together egg with 2 Tablespoons water. Set aside.
  • Using a meat mallet, gently pound chicken breasts to even thickness.
  • Generously salt and pepper both sides of chicken breasts.
  • Dip each chicken breast in egg wash, then shake in cornflake mixture, coating completely. (Press mixture onto each breast to help it stick.)
  • Place coated chicken breasts on a baking pan and drizzle with olive oil.
  • Bake 20-30 minutes, depending on thickness of chicken, until cooked thru and lightly browned.

    Dee-lish! A tasty variation – nice and tangy! No mallet – so I cut chicken into strips. Extra crunchy goodness. :)
